Method

Prepare Pecan Butter

    Toast the Pecans

    In a dry skillet over medium heat, toast the pecans until they are fragrant and lightly browned, about 5-7 minutes. Stir frequently to prevent burning.

    Make the Pecan Butter

    In a food processor, combine the toasted pecans, unsalted butter, minced garlic, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning to taste. Set aside.

Cook the Grouper

    Prepare the Fish

    Season the Fresh Florida Black Grouper fillet with salt and black pepper on both sides.

    Sear the Grouper

    Heat a skillet over medium-high heat with a little oil. Once hot, add the seasoned grouper fillet and sear for 3-4 minutes on each side or until the fish is cooked through and flakes easily with a fork.

Serve

    Plate the Dish

    Place the cooked grouper on a plate and top generously with the pecan butter.

    Finely chop the scallions and sprinkle over the top of the grouper for added flavor and presentation.
