Method

Prepare Duck Breast

    Scoring the Skin

    Score the skin of the duck breast in a crosshatch pattern, being careful not to cut into the meat.

    Seasoning

    Season both sides with salt and black pepper. Let it sit at room temperature for 30 minutes.

Cook Duck Breast

    Preheat Oven

    Preheat the oven to 400°F (200°C).

    Sear Duck Breast

    Heat a skillet over medium heat. Place the duck breast skin-side down in the skillet and cook for about 6-8 minutes until the skin is crispy and golden.

    Roasting Duck Breast

    Flip the duck breast and transfer the skillet to the preheated oven. Roast for another 5-7 minutes for medium-rare.

    Resting

    Remove the duck breast from the oven and let it rest for 5 minutes before slicing.

Make Demi-Glace

    Combine Ingredients

    In a saucepan, combine beef stock, red wine, and shallots. Bring to a boil over medium-high heat, then reduce to a simmer.

    Simmer

    Add the thyme sprig and simmer for about 20-30 minutes until the sauce is reduced by half.

    Finish Sauce

    Remove the thyme, and whisk in the butter until melted and incorporated.

Plating

    Slice Duck Breast

    Thinly slice the duck breast against the grain.

    Plate Dish

    Arrange the slices on a plate, drizzle with demi-glace, and scatter fresh blueberries on top.

    Garnish with microgreens or parsley before serving.
