In a medium saucepan, combine 2 cups of heavy cream and the split vanilla bean (scrape the seeds into the cream). Heat the mixture over medium heat until it just begins to simmer, stirring occasionally to prevent burning. Remove from heat and let steep for about 15 minutes to infuse the vanilla flavor.

Whisk the Egg Yolks
In a mixing bowl, whisk together 5 large egg yolks, 1 cup of granulated sugar, and a pinch of salt until the mixture is pale and thick.

Combine Mixtures
Gradually pour the warm cream mixture into the egg yolk mixture, whisking constantly to prevent the eggs from scrambling. Make sure to remove the vanilla bean pod from the cream before combining.

Strain the Mixture
Pour the combined mixture through a fine-mesh sieve into a large measuring cup or bowl to remove any solids or cooked egg bits.

Bake the Custards
Carefully pour hot water into the baking dish around the ramekins, creating a water bath that comes halfway up the sides of the ramekins. Bake in the preheated oven for about 30-35 minutes, or until the edges are set but the centers still jiggle slightly. Remove from the oven and let cool to room temperature.

Once cooled, cover each ramekin with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.

Caramelize the Sugar
Before serving, sprinkle 1 tablespoon of sugar evenly on top of each custard. Using a kitchen torch, heat the sugar until it melts and caramelizes, creating a crispy top. If you don't have a torch, you can place the ramekins under the broiler for 1-2 minutes, watching closely to prevent burning.
