Method

Mushroom Base Preparation

  1. 1

    Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Then, add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

  2. 2

    Cook the Mushrooms

Add the sliced Portobello mushrooms to the pot. Stir in the thyme, salt, and black pepper. Cook for about 8-10 minutes, stirring occasionally, until the mushrooms are tender and have released their juices.

Cream Mixture Preparation

  1. 3

    Add the Broth

Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 10 minutes to meld the flavors.

  2. 4

    Blend and Add Cream

Using an immersion blender, blend the mixture until smooth. Alternatively, transfer to a blender and blend in batches if necessary. Once blended, return the soup to the pot and stir in the heavy cream and a pinch of nutmeg. Heat gently until warmed through.

Garnishing and Serving

  1. 5

    Serve the Soup

Ladle the cream of Portobello mushroom soup into bowls. Garnish with chopped fresh parsley and a sprinkling of grated Parmesan cheese before serving.
