Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (390°F).

  2. 2

    Prepare Ramekins

Grease four ramekins with butter and dust with flour to prevent sticking.

Making the Fondant

  1. 3

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (bain-marie), stirring until smooth. Remove from heat and let cool slightly.

  2. 4

    Mix Eggs and Sugar

In a separate bowl, whisk the eggs and caster sugar together until the mixture is pale and fluffy.

  3. 5

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously to combine.

  4. 6

    Add Flour and Salt

Sift the plain flour and add it along with a pinch of salt to the chocolate mixture, folding gently until just combined.

Baking

  1. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

  2. 8

    Bake

Place the ramekins in the preheated oven and bake for 10-12 minutes, or until the edges are set but the center is still soft.

Serving

  1. 9

    Serve

Allow the fondants to cool for 1 minute before carefully inverting them onto plates. Serve immediately with a scoop of vanilla ice cream.
