Crust Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Make the Crust

    In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

    Press the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan. Bake in the preheated oven for 10 minutes, then remove and let cool.

Cheesecake Filling Preparation

    Mix the Cream Cheese

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

    Add Sugar and Sour Cream

    Gradually add granulated sugar and sour cream to the cream cheese, mixing until fully incorporated.

    Add Vanilla and Eggs

    Add vanilla extract and eggs one at a time, mixing well after each addition until fully combined.

    Pour Filling into Crust

    Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.

    Bake the Cheesecake

    Bake in the oven for 50-60 minutes, until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

    Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight.

Topping Preparation

    Prepare the Strawberries

    In a bowl, combine sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat the strawberries.

    Let the Strawberries Marinate

    Allow the strawberries to sit for about 30 minutes, letting the juices develop.

    Serve the Cheesecake

    Once the cheesecake is chilled, remove it from the springform pan. Top with the marinated strawberries just before serving.
