Calamari Preparation

    Clean the Calamari

    Rinse the calamari under cold water. Remove the head and innards, and slice the body into 1/2-inch rings. If using whole calamari, ensure to clean thoroughly.

    Marinate the Calamari

    Place the cleaned calamari in a bowl and pour buttermilk over it. Stir gently to ensure all pieces are coated. Cover and refrigerate for at least 30 minutes to tenderize.

    Prepare the Breading

    In a large bowl, mix together the flour, cornstarch, salt, black pepper, paprika, and garlic powder until well combined.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Coat the Calamari

    Remove the calamari from the buttermilk. Dredge each piece in the flour mixture, shaking off any excess.

    Fry the Calamari

    Carefully place a handful of the coated calamari into the hot oil. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.

    Serve the crispy calamari hot with marinara sauce for dipping.

Marinara Sauce Preparation

    Sauté the Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add the Tomatoes

    Pour in the crushed tomatoes, stirring to combine with the garlic. Bring to a simmer.

    Season the Sauce

    Add the dried oregano, dried basil, salt, black pepper, and sugar. Stir well and let simmer for 15-20 minutes, allowing the flavors to meld.

    Serve Marinara

    Once the sauce has thickened slightly, remove from heat and serve warm alongside the fried calamari.
