Preparing the Bread

Preheat the Oven
Preheat your oven to 400°F (200°C).

Slice the Bread
Slice the baguette or Italian bread into 1/2 inch thick slices.

Brush with Olive Oil
Place the slices on a baking sheet and brush one side of each slice generously with olive oil.

Toast the Bread
Toast the bread in the preheated oven for about 5-7 minutes, or until golden brown and crispy.

Chop the Tomatoes
Dice the fresh tomatoes into small pieces and place them in a mixing bowl.

Chop the Basil
Chop the fresh basil leaves finely and add them to the bowl with the tomatoes.

Mince the Garlic
Mince the garlic cloves and add to the tomato and basil mixture.

Season the Mixture
Add salt and black pepper to taste. Mix all ingredients together gently.
Assembly

Top the Toast
Once the bread is toasted, remove it from the oven and let it cool for a minute.

Add Tomato Topping
Spoon the tomato and basil mixture generously on top of the toasted side of each bread slice.

Drizzle a little extra olive oil over the topped bruschetta if desired and serve immediately.
