Prepare the Citrus Shallot Butter

Make the Butter
In a small saucepan, melt the unsalted butter over low heat. Add the finely chopped shallots and sauté until they are soft and translucent, about 3-4 minutes.

Add Citrus
Stir in the lemon juice, orange juice, fresh parsley, salt, and black pepper. Cook for another 1-2 minutes until heated through. Remove from heat and set aside.
Prepare the Mahi Mahi

Season the Fish
Rub the Mahi Mahi fillets with olive oil, paprika, garlic powder, and onion powder. Ensure they are well coated.

Grill the Fish
Preheat the grill to medium-high heat. Place the seasoned Mahi Mahi fillets on the grill and cook for about 4-5 minutes on each side or until the fish is opaque and flakes easily with a fork.
Serve

Plate the Dish
Place the grilled Mahi Mahi on a serving plate and drizzle the citrus shallot butter over the top. Serve immediately.
