Charred Octopus Chimichurri

Method

Cooking the Pork Belly

Prepare the Pork Belly

Preheat the oven to 300°F (150°C). Score the skin of the pork belly and season it with brown sugar, soy sauce, sriracha, garlic powder, and black pepper. Place it in a roasting pan.

Roast

Cover the pan with foil and roast for about 2.5 hours. Remove the foil and increase the oven temperature to 400°F (200°C) for an additional 30 minutes, or until the skin is crispy.

Charred Octopus

Prepare the Octopus

Boil the octopus in salted water for 45 minutes, then drain and let cool. Heat a grill and char the octopus on both sides until lightly charred.

Make the Chimichurri

In a bowl, mix together olive oil, parsley, red wine vinegar, minced garlic, and red pepper flakes. Drizzle over the grilled octopus.

Jalapeno Slaw

Mix the Slaw

In a large bowl, combine shredded cabbage, sliced jalapenos, shredded carrots, mayonnaise, lime juice, and salt. Toss well to combine.

Tomato + Sweet Peppers

Prepare the Tomato and Peppers

In a bowl, combine halved cherry tomatoes, diced sweet peppers, olive oil, balsamic vinegar, and chopped fresh basil. Toss to combine.
