Lobster Bisque Ingredients

Method

Instructions

1

Prepare the Base

In a large pot, melt the butter over medium heat. Add the minced shallots and garlic, cooking until softened and fragrant, about 3-4 minutes.

2

Add Tomato Paste and Cognac

Stir in the tomato paste and cook for an additional 2 minutes. Carefully add the cognac or brandy and let it simmer for another minute to reduce slightly.

3

Incorporate Stock and Lobster

Pour in the fish stock and bring the mixture to a boil. Reduce the heat and add the lobster meat, simmering for about 10 minutes.

4

Blend the Soup

Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup and leave the other half as is.

5

Add Cream and Season

Stir in the heavy cream and season with salt, black pepper, and thyme. Let it simmer for an additional 5 minutes.

6

Serve

Ladle the bisque into bowls and garnish with chopped parsley before serving.
