Preparing the Filet Mignon

    Season the Steaks

    Pat the filet mignon steaks dry with paper towels. Rub both sides with olive oil, then season generously with salt and black pepper.

    Sear the Steaks

    Heat a skillet over medium-high heat. Once hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare, adjusting the time based on your desired doneness.

    Add Garlic and Rosemary

    In the last minute of cooking, add garlic cloves and fresh rosemary to the pan. Spoon the pan juices over the steaks as they finish cooking.

    Rest the Steaks

    Remove the steaks from the skillet and let them rest for at least 5 minutes before serving.

Preparing the Potato Garlic Mashed

    Boil the Potatoes

    Peel and cut the russet potatoes into chunks. Place them in a pot of cold salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Cook the Garlic

    In the last 5 minutes of cooking the potatoes, add the garlic cloves to the pot.

    Mash the Potatoes

    Drain the potatoes and garlic. Return them to the pot, add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

    Serve

    Serve the garlic mashed potatoes alongside the filet mignon.
