Gelato Preparation

Prepare the Base
In a saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat until the sugar dissolves and the mixture is warm, but not boiling.

Cook the Mixture
Cook the mixture over medium heat, stirring constantly, until it thickens and coats the back of a spoon, about 5-7 minutes. Do not let it boil.

Cool the Base
Remove from heat and let the mixture cool to room temperature. Then cover and refrigerate for at least 4 hours or overnight.

Churn the Gelato
Once the base is chilled, churn it in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.

Flavoring (Optional)
At this point, you can mix in seasonal flavors like fresh fruit purees, chocolate, nuts, or spices as desired.

Freeze the Gelato
Transfer the gelato to an airtight container and freeze for at least 2 hours before serving.
