Preparation and Cooking

    Make the Pasta

    In a large bowl, combine flour and salt. Make a well in the center and add the eggs. Gradually mix flour into eggs until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

    Roll Out the Dough

    After resting, divide the dough into four pieces. Roll each piece out to a thin sheet using a pasta machine or a rolling pin. Cut into tagliatelle strips and set aside.

    Cook the Seafood

    In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant. Add shrimp, scallops, clams, langostinos, and mussels. Cook until all seafood is cooked through and clams and mussels have opened, about 5-7 minutes.

    Make the Sauce

    Stir in the diced red, green, and jalapeño peppers, and cook for another 3-4 minutes. Add heavy cream and bring to a simmer. Stir in parsley and black pepper to taste.

    Combine with Pasta

    Meanwhile, bring a large pot of salted water to a boil. Cook the tagliatelle for 3-4 minutes until al dente. Drain and add to the skillet with the seafood and sauce. Toss to combine.

    Serve

    Serve immediately, garnished with grated Parmesan cheese.
