    Make the Dough

    In a bowl, mix the flour and salt. Create a well in the center and add the eggs. Gradually mix the flour into the eggs until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

    Prepare the Filling

    In a bowl, combine the chopped lobster meat, ricotta cheese, chives, and lemon zest. Mix well and season with salt and pepper to taste.

    Roll Out the Dough

    After resting, divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin.

    Form the Ravioli

    On one sheet of dough, place small spoonfuls of the lobster filling, spacing them about 2 inches apart. Moisten the edges with water, then lay another sheet of dough on top. Press down around each filling to seal. Cut out the ravioli with a cutter or knife.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 4-5 minutes, until they float to the top. Remove with a slotted spoon and drain.

    Prepare the Lobster Cream Sauce

    In a skillet, heat 2 tablespoons of butter over medium heat. Add 1 cup of heavy cream and cook for 5 minutes. Stir in any remaining lobster meat and season with salt and pepper. Add the cooked ravioli and toss gently to coat.
