    Prepare the Chicken

    Pound the chicken breasts to an even thickness. Season with salt and black pepper.

    Bread the Chicken

    Dredge each chicken breast in flour, then dip in beaten eggs, and finally coat with breadcrumbs.

    Cook the Chicken

    In a large skillet, heat olive oil over medium heat. Cook the breaded chicken breasts for about 5-7 minutes on each side until golden brown and cooked through. Remove and set aside.

    Make the Sauce

    In the same skillet, melt the butter, then add the white wine and lemon juice, scraping the bottom of the pan to release any browned bits. Bring to a simmer for 3-4 minutes.

    Finish with Capers and Parsley

    Stir in the capers and chopped parsley into the sauce. Return the chicken to the skillet, spoon sauce over the top, and let simmer for another 2 minutes.

    Serve

    Plate the chicken and drizzle remaining sauce on top. Garnish with additional parsley if desired.
