    Caramelize the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 30-40 minutes until they are soft and caramelized. Make sure to scrape the bottom of the pot to prevent burning.

    Add Broth and Wine

    Once the onions are caramelized, add the dry white wine and cook for an additional 5 minutes. Then, pour in the beef broth and add thyme, salt, and black pepper. Bring the mixture to a simmer and let it cook for another 20 minutes.

    While the soup is simmering, preheat the oven to 350°F (175°C). Slice the French baguette into 1-inch thick pieces and place them on a baking sheet. Bake for about 10 minutes until lightly toasted.

    Ladle the soup into oven-safe bowls. Top each bowl with a few pieces of the toasted baguette and sprinkle with Gruyère cheese. Place the bowls under the broiler for 2-3 minutes, or until the cheese is bubbly and golden.
