Ravioli Dough

Method

Preparation

  1. 1

    Make the Dough

In a large bowl, mix flour and salt. Make a well in the center, add eggs, and gradually mix flour into eggs until a dough forms. Knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

  2. 2

    Prepare the Filling

In a skillet over medium heat, cook ground beef until browned. Drain excess fat. Add garlic, parsley, salt, and pepper, and mix in ricotta and Parmesan cheese. Let cool.

  3. 3

    Roll Out the Dough

Divide the dough into four pieces. Roll out each piece on a floured surface until thin (about 1/16 inch).

  4. 4

    Form the Ravioli

Place small spoonfuls of filling on one sheet of dough, spacing them about 2 inches apart. Moisten the edges with water, then cover with another sheet of dough. Press to seal and cut into squares.

  5. 5

    Cook the Ravioli

Boil a large pot of salted water. Cook ravioli in batches for about 3-5 minutes until they float to the surface. Remove with a slotted spoon.

  6. 6

    Prepare the Bolognese Sauce

In a large saucepan, heat olive oil over medium heat. Add onion, carrot, and celery, and sauté until softened. Add garlic and cook for an additional minute. Stir in crushed tomatoes, red wine, salt, pepper, oregano, and basil. Simmer for 20 minutes.

  7. 7

    Combine and Serve

Toss cooked ravioli in Bolognese sauce. Serve hot, garnished with extra Parmesan cheese if desired.
