Calamari

Method

Preparation of Calamari

  1. 1

    Clean the Calamari

Rinse the fresh calamari under cold water. Remove the head and innards, then slice the bodies into rings about 1/2 inch thick. Pat dry with paper towels.

  2. 2

    Marinate in Buttermilk

Place the cleaned calamari into a bowl and pour the buttermilk over them. Cover and let marinate in the refrigerator for at least 30 minutes.

Breading and Frying

  1. 3

    Prepare the Breading Mix

In a large bowl, combine the all-purpose flour, cornmeal, salt, black pepper, paprika, and garlic powder. Mix thoroughly.

  2. 4

    Heat the Oil

In a deep pot or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the breading mix into it; it should sizzle immediately.

  3. 5

    Coat the Calamari

Remove the calamari from the buttermilk, allowing excess to drip off. Toss the calamari rings in the breading mixture until well-coated.

  4. 6

    Fry the Calamari

Carefully drop the coated calamari rings into the hot oil in small batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

  5. 7

    Serve

Serve the fried calamari hot with your dipping sauce.

Preparation of Dipping Sauce

  1. 8

    Mix the Dipping Sauce

In a small bowl, combine the mayonnaise, ketchup, lemon juice, Worcestershire sauce, and hot sauce. Stir until well blended.

  2. 9

    Taste and Adjust

Taste the dipping sauce and adjust the hot sauce to your preference.
