Preparation of Calamari

Clean the Calamari
Rinse the fresh calamari under cold water. Remove the head and innards, then slice the bodies into rings about 1/2 inch thick. Pat dry with paper towels.

Marinate in Buttermilk
Place the cleaned calamari into a bowl and pour the buttermilk over them. Cover and let marinate in the refrigerator for at least 30 minutes.
Breading and Frying

Prepare the Breading Mix
In a large bowl, combine the all-purpose flour, cornmeal, salt, black pepper, paprika, and garlic powder. Mix thoroughly.

Heat the Oil
In a deep pot or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the breading mix into it; it should sizzle immediately.

Remove the calamari from the buttermilk, allowing excess to drip off. Toss the calamari rings in the breading mixture until well-coated.
