Prepare the Filet Mignon
Season the filet mignon pieces with coarse black pepper and salt on all sides. Allow them to sit at room temperature for about 30 minutes.

Sauté the Shallots
Finely chop the shallots. In a medium skillet, melt 1 tablespoon of butter over medium heat. Add the chopped shallots and sauté until translucent, about 3-4 minutes.

In a large skillet, heat the black truffle oil over medium-high heat. Add the seasoned filet mignon and sear each side for about 4-5 minutes for medium-rare. Remove from skillet and let rest.

In the same skillet used for the steak, add the sautéed shallots. Pour in the beef broth and bring to a simmer. Reduce by half, then stir in the heavy cream and cook until thickened, about 5 minutes.

Stir in the remaining tablespoon of butter and thinly sliced fresh black truffles into the sauce. Mix well and season with additional salt and pepper to taste.
