Fresh Strawberry Sauce

Prepare the Strawberries
Wash the fresh strawberries thoroughly under cold water. Remove the green tops and slice the strawberries into quarters.

Make the Sauce
In a medium-sized saucepan, combine the sliced strawberries, granulated sugar, lemon juice, and vanilla extract. Stir gently to mix. Heat over medium heat until the strawberries start to break down and release their juices, about 5-7 minutes.

Cool the Sauce
Remove the saucepan from heat and let the sauce cool for at least 10 minutes. You can blend it for a smoother consistency if desired.
Whipped Cream

Chill the Coconut Cream
Place the can of coconut cream in the refrigerator overnight to chill. This will make it easier to whip.

Whip the Cream
Open the chilled can of coconut cream and scoop out the solid cream into a mixing bowl, leaving the liquid behind. Add powdered sugar and vanilla extract. Use an electric mixer to whip until soft peaks form, about 2-4 minutes.

Serve
Spoon the whipped coconut cream over the fresh strawberry sauce in individual serving bowls or plates.
