Croustade Base Preparation

    Prepare the Puff Pastry

    Preheat your oven to 200°C (400°F). Roll out the puff pastry sheets on a lightly floured surface and cut them into rounds that will fit into a muffin tin. Lightly grease the muffin tin and place the pastry rounds into each cup, pressing gently.

    Egg Wash and Bake

    Brush the pastry cups with the beaten egg and sprinkle sesame seeds on top. Bake in the preheated oven for 15-20 minutes or until golden brown. Remove from the oven and let them cool.

Kobe Tenderloin Filling Preparation

    Sear the Kobe Beef

    In a skillet, heat the olive oil over medium-high heat. Season the Kobe beef tenderloin with salt and black pepper. Sear the beef on all sides for about 3-4 minutes until browned. Remove from heat and let it rest for 5 minutes before slicing it into small pieces.

    Add Flavoring

    In the same skillet, add minced garlic and thyme. Sauté for 1-2 minutes until fragrant. Add the sliced tenderloin back into the skillet, mix well, and set aside.

Mushroom Duxelles Preparation

    Cook the Mushrooms

    In a separate pan, melt the butter over medium heat. Add finely chopped shallots and cook for 2-3 minutes until translucent. Then add the chopped mushrooms and cook until they release their liquid and become dry, about 5-7 minutes.

    Deglaze and Season

    Pour in the white wine and cook until evaporated. Season with salt and black pepper. Remove from heat and let cool.

Assembly and Garnish

    Fill the Croustade

    Take the cooled croustade shells and fill them with the mushroom duxelles first, then layer the Kobe beef filling on top.

    Garnish and Serve

    Drizzle with truffle oil and sprinkle chopped chives on top of each croustade. Serve immediately as an elegant appetizer.
