    Prepare the Filet Mignon

    Take the filet mignon pieces out of the refrigerator and let them sit at room temperature for about 30 minutes. This ensures even cooking.

    Seasoning

    Rub the olive oil over the filet mignon pieces. Generously sprinkle salt and black pepper on both sides of the meat, ensuring an even coating.

Cooking

    Preheat the Pan

    Heat a cast-iron skillet or heavy-bottom pan over medium-high heat for about 5 minutes until hot.

    Sear the Filet

    Place the seasoned filet mignon in the hot skillet. Sear for about 3-4 minutes on one side until a golden-brown crust forms. Avoid moving the meat around.

    Flip and Add Aromatics

    Flip the filet mignon to the other side and add the fresh rosemary and garlic cloves to the pan. Sear for another 3-4 minutes for medium-rare doneness.

    Rest the Meat

    Remove the filet from the skillet and let it rest on a plate for 5-7 minutes. This allows the juices to redistribute.
