Pork Chops

Roasted Garlic Mashed Potatoes

Method

Pork Chops

  1. 1

    Prepare the Pork Chops

Take the double cut pork chops out of the refrigerator and allow them to come to room temperature for about 30 minutes.

  2. 2

    Season the Pork Chops

Rub the pork chops with olive oil, then season generously with salt, black pepper, and fresh rosemary.

  3. 3

    Cook the Pork Chops

Preheat a grill or skillet over medium-high heat. Cook the pork chops for about 5-7 minutes on each side for medium-rare, or until the internal temperature reaches 145°F (63°C). Let rest for 5 minutes before serving.

Sautéed Mushrooms

  1. 4

    Sauté the Mushrooms

In a skillet, melt the butter over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes until they are golden brown.

  2. 5

    Add Garlic and Thyme

Add the minced garlic and fresh thyme to the mushrooms, cooking for another 2-3 minutes until fragrant. Season with salt and black pepper.

Roasted Garlic Mashed Potatoes

  1. 6

    Roast the Garlic

Preheat the oven to 400°F (200°C). Slice the top off the whole bulb of garlic, drizzle with olive oil, wrap it in foil, and roast for about 30-35 minutes until soft.

  2. 7

    Prepare the Potatoes

While the garlic is roasting, peel and chop the potatoes into even pieces. Boil in salted water until tender, about 15-20 minutes.

  3. 8

    Mash the Potatoes

Drain the potatoes and return them to the pot. Squeeze the roasted garlic cloves out of their skins and add to the potatoes. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.
