Preparation

Prepare the Fava Beans

Soak the fava beans in water overnight. Drain and cook in boiling salted water for about 10-15 minutes until tender. Drain again and set aside.

Prepare the Octopus

In a large pot, bring water to a boil. Add the octopus and cook for about 30-40 minutes until tender. Remove from water and allow to cool. Once cooled, chop into bite-sized pieces.

Sauté the Garlic and Serrano Ham

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add chopped serrano ham and cook until crispy.

Combine Ingredients

In a bowl, combine the cooked fava beans, octopus pieces, sautéed garlic and serrano ham, and sprinkle with espelette pepper. Mix well and season with salt and black pepper.

Plate the Dish

Serve the octopus mixture warm. Drizzle with fresh lemon juice before serving for added flavor.
