Preparation

Prepare the Pork Chops

Season pork chops with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat, and sear the pork chops for about 4-5 minutes on each side until browned and cooked through. Remove from the skillet and let rest.

Cook the Cippolini Onions

In the same skillet, add butter and cippolini onions. Sauté until the onions are caramelized, about 8-10 minutes. Stir in balsamic vinegar and honey, and cook for another 2-3 minutes until the mixture is syrupy.

Prepare the Pork Jus

In a saucepan, combine pork stock, red wine, minced garlic, and fresh thyme. Bring to a simmer and reduce the sauce by half, about 15-20 minutes. Strain if desired.

Plate the Dish

Serve the pork chops with a generous portion of caramelized cippolini onions on top and drizzle with pork jus. Enjoy!
