Prepare the ramekins
Preheat the oven to 375°F (190°C). Grease four ramekins with butter and dust with granulated sugar, shaking out any excess.
Beat the egg whites
In a clean bowl, beat the egg whites until soft peaks form. Gradually add granulated sugar and continue beating until stiff peaks form.
Fill ramekins
Spoon the soufflé mixture into the prepared ramekins, filling them just below the rim.
