Prepare the Halibut

Season the halibut fillets with salt and black pepper. Set aside.

Prepare the Vegetables

Trim the ends of the ramps, snap peas, and snow peas. Rinse under cold water and set aside.

Cooking

Poach the Halibut

In a large skillet, pour in the olive oil and heat over low heat. Place the seasoned halibut fillets in the skillet. Cook gently for about 15 minutes, or until the fish is opaque and flakes easily with a fork.

Sauté the Vegetables

In a separate pan, sauté the ramps, snap peas, and snow peas in a little olive oil over medium heat for about 3-5 minutes, until they are tender-crisp.

Plate the Dish

Carefully place the poached halibut on a plate, and arrange the sautéed vegetables around it. Drizzle with additional olive oil if desired.
