Prepare the Beef

Finely chop the beef tenderloin and place it in a bowl.

Mix Ingredients

Add capers, Dijon mustard, Worcestershire sauce, olive oil, salt, and black pepper to the chopped beef. Mix well until combined.

Prepare Egg Yolks

Carefully separate the egg yolks from the whites and place them in a small bowl. To cure, sprinkle a pinch of salt over the yolks and let them sit for about 30 minutes.

Toast Brioche

Toast the brioche slices until golden brown.

Plate the Tartare

Divide the beef mixture onto plates, shape into a mound, and place a cured egg yolk on top of each serving.

Garnish and Serve

Garnish with fresh watercress and serve with toasted brioche on the side.
