    Prepare the Abalone

    Rinse the abalone under cold water and pat dry. Using a sharp knife, carefully remove the meat from the shell and slice it into thin pieces.

    Sauté the Mushrooms

    In a large skillet, melt the butter over medium heat. Add the sliced maitake mushrooms and sauté for about 5 minutes until they are golden brown.

    Add Garlic and Thyme

    Stir in the minced garlic and fresh thyme, cooking for an additional 2 minutes until fragrant.

    Cook the Abalone

    Add the sliced abalone to the skillet and cook for about 2-3 minutes on each side until just cooked through and tender.

    Finish with Preserved Lemon

    Stir in the chopped preserved lemon, salt, black pepper, and lemon juice. Cook for an additional minute, then remove from heat.

    Serve

    Plate the wild Mexican abalone with the sautéed maitake mushrooms and drizzle with any remaining sauce from the skillet.
