Prepare the Tuna

Heat olive oil in a skillet over medium-high heat. Season the ahi tuna with sea salt and black pepper. Sear the tuna for about 1-2 minutes on each side, depending on thickness, until the outside is browned but the inside remains rare.

Make the Sauce

In a small bowl, mix together the Black Orchid mustard, soy sauce, rice vinegar, sesame oil, and grated ginger until well combined. Adjust seasoning to taste.

Slice the Tuna

Remove the tuna from the skillet and let it rest for a minute. Slice it thinly against the grain.

Plate and Serve

Arrange the sliced tuna on a plate. Drizzle the Black Orchid mustard sauce over the tuna and garnish with microgreens.
