Prepare the Crust

Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.

Bake the Crust

Bake the crust in the preheated oven for 8-10 minutes until lightly golden. Remove from oven and let it cool.

Prepare the Cheesecake Filling

In a large bowl, beat the fromage blanc (or goat cheese) until smooth. Gradually add in the sugar and vanilla extract, mixing until well combined.

Add Eggs and Sour Cream

Add the eggs one at a time, mixing well after each addition. Then fold in the sour cream until fully incorporated.

Bake the Cheesecake

Pour the cheesecake filling over the cooled crust. Bake in the oven for 45-50 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

Cool and Chill

Remove the cheesecake from the oven and let it cool to room temperature. Once cool, refrigerate for at least 4 hours or overnight.

Serve

Before serving, drizzle wild honey on top of the cheesecake and slice into wedges. Enjoy!
