    Prepare the Rub

    In a small bowl, mix together ancho chile powder, brown sugar, garlic powder, onion powder, smoked paprika, salt, and black pepper.

    Season the Steak

    Rub the olive oil over the ribeye steak. Generously apply the spice rub all over the steak, ensuring it is evenly coated. Let it sit at room temperature for about 30 minutes to allow the flavors to penetrate.

    Prepare the Smoker

    Soak hickory wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

    Smoke the Steak

    Once the smoker is ready, add the soaked hickory wood chips to the smoker box. Place the ribeye steak on the grill grates and smoke for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.

    Remove the steak from the smoker and let it rest for 10-15 minutes before slicing. Serve and enjoy!
