Cake Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease three 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, sift together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.

    Combine Wet Ingredients

    In another bowl, whisk together the oil, eggs, and vanilla extract until well combined.

    Combine Mixtures

    Gradually add the wet mixture to the dry mixture, stirring until just combined. Fold in the grated carrots, black currants, and chopped pecans.

    Bake the Cakes

    Divide the batter evenly among the three prepared pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

    Cool the Cakes

    Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

Frosting Preparation

    Make the Frosting

    In a large bowl, beat together the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy and well combined.

    Assemble the Cake

    Once the cakes are completely cooled, place one layer on a serving plate, spread a layer of frosting on top, then repeat with the second layer. Place the third layer on top and frost the top and sides of the cake.

    Optionally, decorate the top with additional chopped pecans or black currants.
