Candied Spiced Bacon

Prepare the Bacon
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Place the bacon strips on the sheet. In a small bowl, mix brown sugar, black pepper, and cayenne pepper. Sprinkle the mixture generously over the bacon. Bake for 15-20 minutes or until the bacon is crispy and caramelized. Remove from the oven and let cool.

Prepare the Pommes Frites
Peel and cut the russet potatoes into thin strips. Rinse them in cold water and pat dry with paper towels. Heat the vegetable oil in a deep fryer or large pot over medium-high heat. Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Drain on paper towels and season with salt to taste.

Assemble the Burger
To assemble, spread Russian dressing on the bottom half of each burger bun. Layer with butter lettuce, the cooked Wagyu patty with melted cheddar, candied spiced bacon, and sliced tomato. Top with the other half of the bun. Serve with a side of pommes frites.
