Preparation and Cooking

    Prepare the Steak

    Remove the ribeye steak from the refrigerator and let it come to room temperature, about 30-60 minutes before cooking. This ensures even cooking.

    Seasoning

    Generously season both sides of the steak with salt and black pepper.

    Heat the Pan

    Heat a cast-iron skillet or heavy-bottomed pan over high heat until it’s smoking hot. Add the olive oil and swirl to coat the bottom of the pan.

    Sear the Steak

    Carefully place the seasoned ribeye in the pan. Sear for about 4-5 minutes on one side without moving it, until a golden-brown crust forms.

    Add Aromatics

    Flip the steak and add the garlic cloves and rosemary to the pan. Cook for another 4-5 minutes for medium-rare, basting the steak with the pan juices using a spoon.

    Check for Doneness

    Use a meat thermometer to check for doneness. The internal temperature should be 130°F (54°C) for medium-rare.

    Rest the Steak

    Remove the steak from the pan and let it rest for at least 5 minutes before slicing. This allows the juices to redistribute.
