    Prepare the Steak

    Remove the center-cut strip loin from the refrigerator and let it come to room temperature for about 30 minutes. Pat it dry with paper towels.

    Season the Steak

    Rub the steak with olive oil, then generously season both sides with kosher salt and black pepper. Sprinkle fresh rosemary on both sides.

    Preheat the Pan

    Heat a heavy skillet (preferably cast iron) over medium-high heat until it's very hot.

    Sear the Steak

    Add the steak to the hot skillet. Sear for 4-5 minutes on one side without moving it, then flip and sear for an additional 4-5 minutes for medium-rare. Adjust the time according to your preferred doneness.

    Add Garlic

    During the last minute of cooking, add the garlic cloves to the pan to infuse the oil with flavor.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute.
