    Prepare the Lobster Tails

    Preheat your broiler. Using kitchen shears, cut the top of the lobster tails lengthwise to expose the meat. Gently pull the meat out and rest it on top of the shell. Season with salt, black pepper, and paprika.

    Broil the Lobster

    Place the prepared lobster tails on a broiler pan and broil for about 8-10 minutes, or until the meat is opaque and slightly browned. Baste with melted butter halfway through cooking.

    Cook the Asparagus

    While the lobster is broiling, bring a pot of salted water to a boil. Blanch the asparagus for about 3-4 minutes until tender-crisp. Drain and set aside.

    Make the Hollandaise Sauce

    In a double boiler, whisk together egg yolks, lemon juice, and salt until thickened. Gradually add melted butter while whisking continuously until the sauce is smooth. Adjust seasoning with salt and pepper to taste.

    Prepare Pommes Frites

    Cook the pommes frites according to package instructions or fry fresh potatoes until golden and crispy. Season with salt.

    Plate the broiled lobster tails alongside the asparagus and pommes frites. Drizzle hollandaise sauce over the lobster and serve immediately.
