    Preheat your oven to 400°F (200°C).

    Prepare the Vegetables

    Peel the carrots and parsnips, then slice them into thin rounds. Trim the asparagus and cut the red potatoes into quarters.

    Prepare the Foil

    Cut four large pieces of parchment paper or aluminum foil. Each piece should be large enough to hold one fillet of fish along with vegetables.

    Season the Fish

    Place one fish fillet in the center of each piece of parchment. Drizzle with olive oil and season with salt, pepper, thyme, rosemary, and herbs de Provence.

    Add the Vegetables

    Distribute the sliced carrots, parsnips, asparagus, and red potatoes evenly around each fillet. Add minced garlic and lemon slices on top.

    Seal the Packets

    Fold the parchment or foil over the fish and vegetables, crimping the edges to seal tightly.

    Place the packets on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and vegetables are tender.

    Carefully open the packets (watch out for steam) and serve immediately, garnishing with additional fresh herbs if desired.
