Method

Foie Gras Preparation

    Season and Sear

    Season the foie gras slices with salt and pepper. Heat butter in a skillet over medium-high heat. Sear the foie gras for about 30 seconds on each side until browned. Remove and set aside.

Brûléed Pineapple

    Prepare and Caramelize Pineapple

    Cut the fresh pineapple into rings. Sprinkle brown sugar on top of each ring. Using a kitchen torch, brûlée the sugar until it caramelizes. Alternatively, place under a broiler until caramelized.

Pickled Strawberries

    Pickle the Strawberries

    In a bowl, combine apple cider vinegar, sugar, and salt. Slice strawberries and add them to the mixture. Let them sit for at least 30 minutes to pickle.

Toasted Brioche

    Toast the Brioche

    Spread butter on both sides of the brioche slices. Toast them in a skillet or toaster until golden brown.

Assembly

    Plate the Dish

    On a plate, arrange the toasted brioche, place the seared foie gras on top, add the brûléed pineapple, and garnish with pickled strawberries.
