    Prepare the Filet Mignon

    Preheat your oven to 400°F (200°C). Season the filet mignon with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the filet mignon for 3-4 minutes on each side until browned. Transfer to the oven and roast for an additional 5-7 minutes for medium-rare.

    Blanch the Asparagus

    While the steak is in the oven, bring a pot of salted water to a boil. Add the fresh asparagus and cook for 2-3 minutes until tender-crisp. Drain and set aside.

    Make the Hollandaise Sauce

    In a double boiler or a heatproof bowl over simmering water, whisk together the egg yolks, lemon juice, and Dijon mustard. Slowly drizzle in the melted butter while whisking continuously until the sauce thickens. Season with salt to taste.

    Prepare the Au Gratin Potatoes

    Preheat the oven to 375°F (190°C). Thinly slice the potatoes and layer them in a greased baking dish. Pour heavy cream over the potatoes and sprinkle with shredded Gruyere cheese. Bake for 30-40 minutes until the cheese is bubbly and golden.

    Serve

    Plate the filet mignon alongside the blanched asparagus and a generous portion of au gratin potatoes. Drizzle hollandaise sauce over the asparagus and serve immediately.
