Duck Preparation

Duck Leg Confit
Season duck legs with salt and let them cure for 24 hours. Rinse and place in a pot covered with duck fat. Cook on low heat for about 2-3 hours until tender.

Seared Duck Breast
Score the skin of the duck breasts and season with salt and pepper. Sear in a hot pan skin-side down for about 6-7 minutes until crispy. Flip and cook for another 4-5 minutes to medium-rare. Let rest before slicing.
Slaw Preparation

In a large bowl, mix together the shredded red cabbage, julienned apple, and shredded carrot. In a separate bowl, whisk together apple cider vinegar, honey, salt, and pepper. Pour over the slaw and mix well.
Port Wine Reduction

Mascarpone Polenta

Bring water to a boil and slowly whisk in polenta. Cook according to package instructions, usually 20-30 minutes. Stir in mascarpone and Parmesan cheese, and season with salt and pepper.
