    Prepare the crust

    Preheat your oven to 350°F (175°C). In a bowl, mix together the graham cracker crumbs, melted butter, and a pinch of salt until combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for about 10 minutes, then allow to cool.

    Make the cheesecake filling

    In a large mixing bowl, beat the cream cheese and fromage blanc until smooth. Gradually add the sugar and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing on low speed until just incorporated. Do not overmix.

    Combine and bake

    Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven for 1 hour with the door cracked.

    Chill and serve

    Refrigerate the cheesecake for at least 4 hours, preferably overnight. Once chilled, remove from the springform pan, slice, and serve.
