    Prepare the Garlic Mashed Potatoes

    Peel and dice the potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot. Add minced garlic, butter, milk, salt, and pepper. Mash until smooth.

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Sauté spinach until wilted, about 3-4 minutes. Remove and set aside. In the same skillet, add asparagus and fava beans, cooking for about 5-7 minutes until tender-crisp.

    Cook the Halibut

    Season the halibut fillets with salt and pepper. In the skillet over medium-high heat, add more olive oil if needed and sear the fish for 4-5 minutes per side until golden brown and cooked through. Remove from skillet and keep warm.

    Make the Dill Beurre Blanc

    In the same skillet, add white wine and lemon juice. Simmer until reduced by half. Lower the heat and whisk in cold butter until emulsified. Stir in chopped dill.

    Plate and Serve

    On each plate, serve a portion of garlic mashed potatoes, top with halibut, and arrange sautéed spinach, asparagus, and fava beans around. Drizzle with dill beurre blanc.
