Barberry Syrup Preparation
Make the syrup
Combine barberries, sugar, and water in a small saucepan. If using dried barberries, rinse briefly and soak in warm water 10 minutes first, then drain. Bring mixture to a gentle simmer over medium heat, stirring to dissolve sugar. Reduce heat and simmer 6–8 minutes until berries have softened and released deep red color. If using fresh or frozen, simmer 4–6 minutes. Remove from heat.
Smash berries lightly with the back of a spoon or a potato masher to extract more juice, then stir in 1 tablespoon fresh lemon juice and optional 1/2 teaspoon lemon zest. Taste and adjust sugar or lemon to balance tartness and sweetness. Let the syrup cool to room temperature (about 20–30 minutes).
Strain the syrup through a fine-mesh sieve or cheesecloth into a clean jar, pressing solids to extract liquid. Discard solids (or reserve for yogurt/topping). Refrigerate the syrup until cold. Yield: roughly 1 to 1 1/4 cups barberry syrup; will keep refrigerated up to 10 days.
Assembling the Cocktail
Fill a cocktail shaker halfway with ice (about 1 cup). Add 1.5 oz barberry syrup, 2 oz vodka (or gin), and 0.5 oz fresh lemon juice to the shaker.
Shake vigorously for 10–12 seconds until well chilled (or 15 seconds if using larger ice).
Strain into a chilled coupe or an ice-filled rocks glass. If you prefer a long drink, fill a highball with ice and top with 2 oz club soda or sparkling water, stirring gently to combine.
Garnish with a lemon wheel or twist and a few barberries/cranberries on a pick. Serve immediately.
Non-alcoholic Option
For a mocktail, in a shaker combine 1.5 oz barberry syrup, 2 oz cold brewed black tea or 2 oz sparkling water, 0.5 oz fresh lemon juice and 2 oz non‑alcoholic spirit if using. Shake with ice and strain into a glass over fresh ice. Top with additional sparkling water if desired and garnish as above.
Serving & Storage Notes
Serves 6–10 cocktails of 1.5 oz syrup per drink from the batch syrup. Barberry syrup refrigerated will keep 7–10 days; freeze in ice cube trays for longer storage (one cube ≈ 0.5 oz). Adjust spirit and soda to taste when scaling.
