Preparation

    Prepare the Marinade

    In a mixing bowl, combine olive oil, lime juice, minced garlic, chopped cilantro, salt, black pepper, and cumin. Whisk until well combined.

    Marinate the Protein

    Divide the marinade into three separate bowls. Add the shrimp to one bowl, the chicken breast to another, and the steak to the last. Cover and refrigerate for at least 30 minutes.

Grilling

    Prepare the Grill

    Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.

    Grill the Protein

    Remove the shrimp, chicken, and steak from the marinade. Grill the shrimp for about 2-3 minutes per side until pink and cooked through. Grill the chicken for about 6-7 minutes per side until fully cooked. Grill the steak for about 4-5 minutes per side for medium-rare.

    Grill the Vegetables

    While the protein is grilling, toss the bell peppers, red onion, and zucchini in the remaining marinade. Grill the vegetables for about 4-5 minutes until tender and slightly charred.

Serving

    Plate the Dish

    Once everything is grilled, slice the chicken and steak if desired. Arrange the grilled shrimp, chicken, steak, and vegetables on a platter. Garnish with sliced avocado and lime wedges.

    Serve

    Serve the Tropico dish warm, with extra lime wedges on the side for squeezing over the top.
