    Rinse and Soak Beans

    Rinse the black beans under cold water to remove any debris. Place the beans in a bowl and cover them with water. Soak the beans for at least 8 hours or overnight.

    Drain and Rinse

    After soaking, drain the beans and rinse them again under cold water.

Cooking

    Cook the Beans

    In a pot, add the soaked black beans and 3 cups of fresh water. Bring to a boil over medium-high heat, then reduce the heat to low. Cover and simmer for about 1 to 1.5 hours, or until the beans are tender.

    Sauté Aromatics

    In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

    Once the beans are tender, add the sautéed onion and garlic to the pot. Stir in 1 teaspoon of salt, 1 teaspoon of cumin, and 1 teaspoon of black pepper. Cook for an additional 10 minutes to allow the flavors to meld.

    Remove the pot from heat and stir in 2 tablespoons of lime juice for brightness and acidity.
