Method

Prepare the Ranchera Sauce

    Cook the Vegetables

    In a pan, heat 2 tablespoons of olive oil over medium heat. Add chopped onions, minced garlic, and diced jalapeño. Sauté for about 5 minutes until softened.

    Blend the Sauce

    Add the chopped tomatoes, cumin, oregano, and salt to the pan. Cook for another 10 minutes, then remove from heat. Blend the mixture until smooth and set aside.

Cook the Fish and Shrimp

    Marinate the Seafood

    In a bowl, combine tilapia fillets and shrimp with lime juice, salt, and pepper. Let it marinate for about 15 minutes.

    Cook the Seafood

    In a skillet over medium-high heat, add the marinated tilapia and shrimp. Cook for 4-5 minutes on each side until the fish is opaque and shrimp are pink.

    Add the Sauce

    Pour the ranchera sauce over the cooked fish and shrimp, allowing it to simmer together for about 5 minutes.

Prepare the Rice

    Cook the Rice

    In a saucepan, bring 2 cups of chicken broth to a boil. Add 1 cup of white rice, reduce heat to low, cover, and simmer for about 18-20 minutes until rice is tender.

    Finish the Rice

    After cooking, fluff the rice with a fork, add chopped cilantro, and juice from half a lime. Stir well.

Make the Guac Salad

    Prepare the Ingredients

    In a bowl, mash the avocado. Add diced tomato, finely chopped red onion, lime juice, cilantro, and salt.

    Mix the Salad

    Combine all ingredients thoroughly and adjust seasoning as needed.
