Filling Preparation

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 3-4 minutes.

    Add Mushrooms

    Stir in the diced mushrooms and continue to cook for another 5 minutes until they are soft.

    Add Pineapple and Season

    Add the diced pineapple, cumin, salt, and black pepper. Cook for an additional 3-4 minutes until the pineapple is heated through. If desired, stir in shredded cheese until melted.

    Cool the Filling

    Remove from heat and let the filling cool for a few minutes before assembling the taquitos.

    Prepare the Tortillas

    Warm the tortillas slightly in a dry skillet or microwave to make them pliable.

    Fill the Tortillas

    Place about 2-3 tablespoons of the filling in the center of each tortilla. Roll tightly, folding in the sides as you roll to secure the filling.

    Fry the Taquitos

    In a pan, heat oil over medium-high heat. Fry the taquitos, seam side down, until golden brown and crispy, about 2-3 minutes per side.

    Drain and Serve

    Once cooked, remove from the pan and drain on paper towels. Serve hot with your choice of salsa or guacamole.
