Prepare Marinade
In a large mixing bowl, combine pineapple juice, achiote paste, minced garlic, oregano, cumin, salt, black pepper, and olive oil. Mix well until all ingredients are thoroughly blended.

Marinate Pork
Cut the pork shoulder into small bite-sized pieces and add it to the marinade. Ensure all pieces are well coated. Cover the bowl and refrigerate for at least 4 hours (preferably overnight) to allow the flavors to develop.

Cook Pork
Preheat your grill or a large skillet over medium-high heat. Remove the pork from the marinade, allowing excess marinade to drip off. Grill or cook the pork for about 8-10 minutes, turning occasionally, until cooked through and slightly charred.

Prepare Tacos
Warm the corn tortillas on a dry skillet until pliable. Once the pork is cooked, let it rest for a few minutes before slicing it into thin strips.

Assemble Tacos
Place a generous amount of the cooked pork onto each tortilla. Top with finely chopped onion and fresh cilantro. Serve with lime wedges on the side for squeezing over the tacos.
